My entire chubby childhood circulated around both Spongebob episodes and his kraft mac & cheese. After a nasty post-weight-loss breakup with my cheesy addiction I decided I wanted to get back together with my first love: Mac & Cheese. IDK about you, but in my case having mac & cheese around is a dangerous game to play. Luckily, with some inspiration from other low-carb recipes on pinterest I have come up with a guilt-free mac & cheese casserole that is somehow even cheesier than I am. I have made this for all of my holiday gatherings and my father now calls it "cauliflower crack" so I'd say it's worth trying.

Ingredients:
- 16 slices of bacon
- 2 large Cauliflower florets
- 1 cup sour cream
- 1 cup mayo (I like Primal Kitchen Mayo based on avocado oil & coconut oil because they are healthier fats for your heart)
- 2 TBSP ranch seasoning (not easy to find so if you must just use ranch dressing)
- 1 TSP black pepper
- 1 TBSP Pink Himalayan Salt
- 1 cups shredded monterey jack cheese
- 1 cups shredded colby cheese
- 1 cup sharp cheddar cheese
- 12 TBSP fresh chopped chives
Instructions:
1. Preheat Oven to 375
2. Spray a large backing dish with non-stick cooking spray (use coconut or olive oil spray)
3. Fry Bacon in a large skillet. To make it cook faster and crispier, carefully cover bacon with a thin layer of water. Be sure to stay near the stove if you do this because it can cook up very quickly!
4. Crumble bacon into tiny pieces and set aside.
5. Steam cauliflower until soft, 15-20 minutes.
6. Mix sour cream, mayonnaise, ranch seasoning, black pepper, and salt in a large bowl.
7. Add cauliflower florets, 1/2 of the bacon, 1 cup sharp cheddar cheese and 3 tablespoons chives to the mixture and mix very well.
8. Transfer mixture to the oiled baking dish and top with your colby & monterey jack cheese and the other half of the bacon.
9. Cover dish with foil and bake for 20 minutes. Remove foil and bake another 5-10 minutes or just until cheese is bubbly and beginning to brown.
10. Throw on remaining chives and salt and pepper to taste.
