"How the fudge are these sugar free?" Brownie Bar Recipe

WHAT THE FUDGE?

WARNING: these bars are super addicting, SUPER dense, chewy and chocolatey. Perfectly moist on the inside with a subtle crunch cripsy layer atop - I'm declaring these the world’s BEST sugar free / low carb / keto and everything in between brownies. They’re rich and delicious and satisfy your sugar cravings with just 1 net carb per brownie. #godbless


I’ve tested plenty of low sugar, healthy brownie and chocolate cake recipes over the years for special occasions and holidays, yet nothing seemed to make as big as a statement as these. Not only do the sugar-conscious members of my family love these, EVERYONE DOES. Even my brothers who eat an entire gallon of chocolate ice cream on the regular said what the fudge when I told them these were made in one of my "fudged-up" healthy ways. They’re so good my family ended up liking them much better than “Claire can you please be normal” brownies.


WARNING: If you’re a choclaholic with no no self-discipline, I suggest only baking a small batch or forcing your family to take a doggy bag home or you will eat the entire batch. But fear not - with just 1 net carb per brownie, these will get you chocolate drunk without out that fudgin' hangover.


Topped with sugar free peeps, sugar free jelly beans, and coconut whipped cream!

Let's Get Down To Business

Prep Time: 15 minutes

Cook Time: 20 minutes

Makes: 16 Brownies


Ingredients:

  • 1/2 cup almond flour

  • 1/4 cup cacao powder

  • 3/4 cup stevia or monk fruit sweetener

  • 1/2 tablespoon baking powder

  • 1 1/2 cup Lilly's chocolate chips

  • 2 eggs

  • 1/2 teaspoon vanilla extract (sometimes I try hazelnut or pumpkin pie spice extract for a nuttier taste)

  • 10 tablespoons butter

Instructions:

  1. Preheat oven to 350 degrees F

  2. Line an 8x8 inch or 8x9 pan with parchment paper, aluminum foil or grease with butter. 

  3. Whisk almond flour, cocoa powder, baking powder, and stevia (or monk fruit sweetener) together in a bowl until clump-free

  4. In another bowl, melt the butter and 1/2 the chocolate chips for 30 seconds to 1 minute or until just melted.

  5. Whisk in the eggs and extract of your choice

  6. Now slowly mis in the dry ingredients just until mixed through without over-mixing as it will become too cakey

  7. Pour the batter into the baking dish

  8. Bake for 20-22 minutes (check with a toothpick before taking out)

  9. Cool for 30 mins to 2 hours in the fridge

  10. Decorate as you please (or be boring and don't), slice them up and dish them out!

Conclusion: Don't go crazy, these are low sugar BUT super dense because of the fat content! Two or three of these bad boys will fill you up, satisfy your cravings, and help you prove to your family no sugar doesn't mean no fudgin' fun!
