YES. I'VE DONE IT. Lots of people get upsetti when starting keto, because they feel like they are depriving themselves of their favorite foods. What many don't know is there are awesome brands out there making recipe pasta-bilities endless. Now, I'm not a big fan of Italian food but I find that those who are tend to claim giving up their delicious dishes is something they simply can't do. BINGO - carbfree spaghetti & meatballs. I even stuffed the meatballs with cheese because I'm a creative genius. You're welcome. HOW? WHAT? Read my recipe below.

*Makes 2 Servings
Ingredients:
1 Package Miracle Shirataki Noodles
1 Egg
1 Cup Ground Beef (or just use a burger patty)
Pink Himalayan Salt
Pepper
2-3 ounces of your fav cheese (I used goat)
Oil or Butter (I used coconut)
Keto-friendly Sauce of Your Liking (I used Trader Joes Pesto!)
Green Veggies of Your Liking Because #health
Calories Per Serving: 500
Fat Per Serving: 39g
Protein Per Serving: 42g
Net Carbs: 1g (depending on cheese and veggie choice - I chose goat and spinach)
Instructions:
1. Combine beef, egg, and breadcrumbs in a large bowl. Mix until you get a cookie-dough like consistency.

2. Add salt and pepper to your liking and whichever cheese you decided on. Mix them all up with the batter.

3. Roll batter into meatball-sized balls (this is the fun part).
4. Spray frying pan with oil (or grease with butter) and place your meatballs on the pan. Turn stovetop to medium heat.

5. Let your meatballs cook while rotating them every couple minutes. I turned the flame up higher because I got impatient, therefore mine were ready in about 7 minutes. (MAKE SURE YOU CUT ONE OPEN BEFORE EATING! YOU DON'T WANT TO CONSUME RAW EGG OR MEAT!)

6. Remove cooked meatballs from pan and place on the side in a plate. Add your green veggies (I used spinach) to the pan and let them cook.

7. Rinse and drain your miracle noodles in a strainer. Place in pot of boiling water for about 2 minutes and then drain again.
8. Place cooked noodles, cooked veggies, and 2 tablespoons of the sauce of your choice into a bowl. Now get to mixin.
